Lazy woman's sushi

Once upon a time I decided that since I loved sushi so much, I should make it myself.  I bought the bamboo sushi mat, the nori, rice, etc.  Somehow we ended up with three sets of sushi plates/soy sauce containers/noodle bowls.

Josh and I spent a few hours making maki rolls one afternoon and then that was the end of it. I found the process for preparing the rice too time consuming.  You shouldn't have to spend hours preparing and cooking just doesn't seem like time well spent. It's just so much easier to buy it....and more delicious.

Fast forward to a few days ago when I came across an article about the nutritional benefits of seaweed.  It included a few easy recipes - one of them simple enough to appease my lazy side.

All it involved was cooked brown rice, nori and a veggie...I chose avocado (actually a fruit, not a veggie).  I never would have considered using brown rice, but it was just as tasty as white, and half the effort.

It took two attempts, but my second set of maki almost looked like it could pass for the real thing - thanks to my new Jamie Oliver knife.  It's actually a bread knife but it worked like magic.

For the dip, it called for a mixture of tamari, ginger, toasted sesame oil and rice vinegar.  I only had the latter two in my pantry, but it was still delish. 

So after a very long hiatus, I'm back to making sushi....but only this lazy person version.  I'll leave the rest to the professionals. I hear Sushiro is a great spot and it's just down the street from us.
